Recipe of the Week: Chicken and Zucchini Tzatziki

This is yum yum yum and healthy.  Per serve it is only worth 300 calories. Serves 5 people.






Ingredients

500g skinless chicken breast
2 lebanese cucumbers or zucchinis
1 x 250g container low fat Tzatziki dip
1 tsp garlic

Method

1. Cut the chicken into cubes or strips and stir fry in either water or a spritz of olive oil, until brown.
2. Remove chicken, but not juices and add zucchini, cook until soft.
3. Return chicken to the pot and add garlic
4. Pour tzatziki in and stir through.


Great sides are rice, salad, pasta or homemade chips.  I personally love this on a bed of jasmine rice or pasta, mix it through and it gives a beautiful tangy taste.  And healthy!!
